Hawaiian Chicken Sliders & Cole Slaw

I found this bad boy recipe when I was scoping out slow cooker recipes. This was so easy and so delicious. Perfect for the busy person who doesn’t have a kajillion hours to spend in the kitchen. Obviously, you’ll need a crockpot for this and I highly recommend getting those liners so you don’t have to do extra dishes.


  • 3 lbs. chicken breasts
  • 1 cup chopped onion
  • 2 tbsp. butter (fake butter for dairy free)
  • 1/4 cup flour
  • 2 cups pineapple juice
  • 1 cup brown sugar
  • 3/4 cup ketchup
  • 1 tbsp. soy sauce
  • 2 tbsp. minced garlic
  • 1 1/2 tsp. Worcestershire sauce
  • 1/2 tsp. each salt, pepper, onion powder, ginger powder


Mix until combined the following: pineapple juice, brown sugar, ketchup, soy sauce, garlic, Worcestershire sauce, salt, pepper, onion powder, and ginger powder then set aside. In a pan, heat up butter over medium high heat and brown the onions. Then, add the flour to coat the onions. Cook for a couple of minutes then add the pineapple juice mixture. Cook and simmer for about 5 minutes, stirring frequently, to eventually thicken the sauce. Add the chicken to the slow cooker and cover with the sauce. Cook on low for 6-8 hours.

Serve in slider buns with Hawaiian cole slaw (see below). In the picture, we actually had tortilla chips and this amazing avocado tomatillo salsa from Pepper Palace.

Hawaiian Cole Slaw

Let me begin by saying I do not like cole slaw, but this was amazing. Something about the pineapple gives it a delicious, sweet bite with the tang.


  • Packaged cole slaw mix (salad section of grocery store)
  • 1 cup diced red bell pepper
  • 1 cup diced pineapple
  • 1/2 cup shredded carrots
  • 1/2 cup chopped macadamia nuts
  • 1 cup mayonnaise
  • 1 1/2 tbsp. honey
  • 1 1/2 tbsp. rice wine vinegar
  • 1 tsp. celery salt


Combine the first five ingredients in a bowl then in a separate bowl, mix the remaining ingredients to create the dressing. Pour dressing over the slaw mixture and enjoy.
