Nothing like having a best friend who is also a great cook. She totally enables my pickiness, but, once in awhile, she hits a home run with something new she makes me try. This is like one of those Pinterest things you see when you search “healthy” and then never make because you’re certain it won’t taste as good as the idea of it. It;s good. I swear. If you’re ambitious, you can buy cauliflower and then put it in your food processor to make the “rice” or just buy it in the freezer section like me. To be even lazier, forget the fresh veggies and just buy the frozen veggie mix.
- cauliflower rice
- frozen veggie mix or whatever veggies you’d like
- 1 tbsp. onion powder
- 1 tbsp. garlic powder
- 3 tbsp. soy sauce
- black pepper
- 2 tbsp. chicken bouillon
- 1 tsp. olive oil
Heat up a frying pan on medium high heat. Add a dash of olive oil and add the cauliflower. Stir for 2-4 minutes then add the veggies and seasoning. Mix well and let sit for 1-2 minutes then stir again. This will help the cauliflower crisp up and give a firmer texture. Serve with your choice of protein.
***If you’re prepping your main entree, then place the frozen cauliflower in a thin layer and roast it in the oven at 350 degrees for 15-20 minutes before cooking it in the frying pan. I love the texture of it when you do this first.
