Sesame Salmon

Mmmm. I dream about this salmon when I’m craving seafood. I served it with cauliflower rice and sauteed garlic spinach….sometimes with asparagus instead of spinach. My best friend shared this recipe to me a few months ago and now I can’t even remember how I used to cook my salmon. The original recipe has the salmon cooking in an oven for 20 minutes and then serving it with the glaze. I cook it in a frying pan and have the glaze reduce down so that the skin is crispy. I also marinate it overnight if I know I’m cooking it immediately the next day (I know it’s a big no no with seafood, but dang it’s good).

Ingredients (Salmon Marinade):

  • 1/4 cup olive oil
  • 3 tbsp. soy sauce (Maggi Seasoning)
  • 2 tbsp. rice vinegar
  • 2 tbsp. sesame oil
  • 2 tbsp. brown sugar
  • 1 tbsp. minced garlic
  • 1 tbsp. grated ginger
  • 1 tbsp. sesame seeds
  • 2-3 salmon fillets

Ingredients (Glaze):

  • 2 tbsp. honey
  • 1 tsp. soy sauce (Maggi Seasoning)
  • 1 tsp. sesame oil
  • 1/2 tsp. sriracha (I add more to up the spiciness)
  • 1/2 tsp. grated ginger
  • 1/2 tsp. sesame seeds

In a bowl, combine the marinade ingredients and thoroughly mix. Place the mixture in a ziploc bag with the salmon and marinate the salmon fillets for at least 30 minutes to overnight. Whisk the glaze ingredients in a bowl and set aside. If you’re baking, then bake the salmon at 400 degrees in a lightly oiled baking pan for about 20 minutes or until fish is flaky. If you’re frying, heat a pan over medium heat with a tablespoon of olive oil. Place the fish in skin side down…now don’t touch it for 4-6 minutes! Flip the fish over for 2-3 minutes then flip back and pour glaze over the fish. Let the glaze reduce and remove from heat. Serve with your choice of sides!
