Chicken Lettuce Wraps

The first time I fell in love with chicken lettuce wraps was my first visit to P.F. Chang’s (I know, I know, a chain restaurant, how could it be.) After that, my mom started replicating it and tweaking it into a version of her own. It’s been a few years since I’ve had my mom’s lettuce wraps, but I bought Chrissy Teigan’s cookbook, Cravings, and it was revived back into my rotation of meals. I’ve had to change it accordingly to my pickiness, however, her version is so amazing. I clearly highly recommend her cookbook.

Ingredients (sauce):

  • 3 tbsp. sweet chili sauce
  • 3 tbsp. hoisin sauce
  • 3 tbsp. soy sauce
  • 2-5 tbsp. sriracha (depends on your spice level)
  • 2 tbsp. vegetable oil
  • 1 tsp. sesame oil
  • 2 tbsp. rice vinegar
  • 2 tbsp. minced garlic
  • 1 tbsp. minced ginger

Ingredients (chicken filling):

  • 1 lb. ground chicken
  • 3 tbsp. vegetable oil
  • 2 green onions, thinly sliced (green separated from white)
  • 1 tbsp. minced garlic
  • 1 tbsp. minced ginger
  • 1/2 cup diced water chestnuts
  • 1/4 cup finely diced or shredded carrots
  • option to add other veggies such as 1/2 lb. of white mushrooms, 1 small red bell pepper, finely chopped, etc.
  • 1 head of butter lettuce

Directions:

To make the sauce, mix the chili sauce, hoisin, soy sauce, sriracha, vegetable oil, sesame oil, vinegar, garlic, and ginger.

To make the filling, mix 2 tbsp. of the sauce into the ground chicken. In a frying pan, heat 2 tbsp. of the vegetable oil over medium high heat. Cook the chicken until it’s brown and set aside. In the pan, add the rest of the vegetable oil and cook the white scallions, garlic, and ginger for about a minute. Add the mushrooms (if using) for a few minutes. Add the chicken back to the pan with the rest of the veggies and the rest of the sauce and cook. Cook until sauce thickens slightly. Add the green scallions. Serve with lettuce leaves.

**I like to make a little extra sauce to serve on the side.
